I’ve been experimenting with vegan recipes lately, and decided to try and make this Creamy Avocado Pasta recipe for dinner today. It was incredibly easy to make – I just blended everything together while blasting Foster the People in my kitchen.


I adapted it a little bit from the original recipe – I added more garlic and lemon juice to counteract the fattiness of the avocado. I also added a few pine nuts into the blender for protein.

I used whole wheat linguine for the pasta and ate it with some fresh bell peppers and celery. Even my sister (who despises “healthy” food) approved of tonight’s dish (she wants to know when I’m going to make it again).
